The predone seasoning appears uniform over the entire surface, although I am surprised the metal itself is not smoother( We'll see how this impacts performance later on ). Be forewarned: this thing is impressively heavy. Its like going to the gym when you're wrangling this thing around in the sink. Hey, no pain no gain!
So let's get cooking. First I scrubbed it down for a minute or so with a stiff nylon brush, removing anything undesireable from the manufacturer.( Nothing was noted ). Next, dried it off and hit the smooth side with a quick blast of PAM and wiped it down nice and even. With this done I made my way out to the Weber gas grill and brought the whole rig up to 475/500. There was an ever so slight trace of smoke coming off the grid. She was ready to go. Perfect! I place a nice 1.0 lbs slab of Ahi( rubbed down with an olive oil/paprika/pepper/salt coating ) on and the stand back in awe. Forget closing the lid. It was beautiful! I can still hear the sizzle... I go for about 2 minutes and flip it over and do the same to the other side. The flip was effortless, no sticking what-so-ever. This baby is a dream. So I turn off the grill, go inside, have dinner, and come back out 30 minutes later to pick it up, and its still to hot to touch. The Weber is stone cold, but the Lodge griddle forgot I cut the flame. 15 minutes later its cool enough to handle but still warm. This is what I call heat retention! In a nutshell I am most impressed. Hopefully we'll get good performace with more delicate items as well.
